5 Day cookery course – “Entertaining made easy” Scallop season

The beginning of coquille saint jaques in France so expect some scallop dishes on this week. On this cookery course we will teach how easy entertaining and dinner parties can be. If you love to have people round for dinner, enjoy cooking for friends or simply want to be able to do it better and add some lovely dishes to your repetoire, then our 5 day “Entertaining made easy” course is perfect for you. We will teach how easy hosting dinner parties can be. Tricks of the trade, forward preparation, timing, portion size & spending more time with your guests. Not only will we teach you french and modern classics but we will show you an Italian inspired meal as well.

Example itinerary beginners Cookery course

 DAY 1 Friday/Saturday We will pick you up at Bergerac Airport and take the picturesc 30minute drive to our house “Les Caulins”. A quick tour of our house, relax, kick off your shoes, have a drink & settle in. We will meet at 7pm for aperitifs, canapés and a 4 course dinner with local wines.

DAY 2 Help yourself to; continental breakfast/ warm croissants, toasted mais bread, house Jam, tea, coffee Juice, etc….

A visit to Issigeac on of Frances prettiest markets to get some wonderful fresh ingredients and have a stroll around and a coffee in one of the cafés. back to the house for lunch and ready for some cooking in the afternoon.

Lemon tart & Garrique strawberries

Afternoon Preparation Quick Knife skills just to check you’re not going to injure yourselves. Onions, Diced Carrot, Tomato Concasse, Mushrooms, Bacon Lardons, Celery, Chicken Stock and creating an easy meal for another day. red wine poached pears, dinner party canapés            

Late Lazy French lunch Sunday Lunch / Dinner French Sunday lunches are celebrated for the way people take their time to enjoy multiple courses of food accompanied by good wine and good conversation. We start with aperitifs and canapés, Oyster if you all like them followed by whatever is in season. Cheese follows and a typically Ice Cream.

 DAY 3

A visit to Duras and our local market A lunch of award winning Goats Cheese that has been made just 2km from the house by the wonderful shepherdess Stephanie.

Afternoon Preparation for dinner may include; red wine poached eggs, preparing sole, potato cake, frasier, confied duck, restauranty “sausages”,

DAY 4 Tuesday Help yourself to; continental breakfast/ warm croissants, toasted mais bread, house Jam, tea, coffee Juice, etc….

Morning Preparation salmon tian, amazing mushroom sauce, sauce, fine apple tart, osso bucco

The afternoon is yours and we can visit one of Frances best chocolate produces at the Chocolate Shop /factory in Duras

Confit duck, duck sausage, foie gras, Roast plums, wilted greens, Lyonaisse

Local cheese and fig marmalade

Apple tart “fin” tonka bean ice cream

 DAY 5 Help yourself to; Continental breakfast/ Croissants, house Jam, Tea, Coffee Juice, etc…. Morning preparation pasta and agnlotti, frasier, polenta

After lunch a visit to a local winery
